Vallisto project, conducted by the oenologists Francisco Lavaque - Marcelo Pelleriti - Hugh Ryman, develops from work in the vineyard that with great precision aims to obtain ripe grapes, healthy and concentrated in all its components. At least four modules of 5 hectares were planted with different Malbec selections. The idea was to get vineyards that have already produced high quality Malbec wines. They are traditionally vinified or microvinified, and classified in microparcels. This way it was possible to identify the genetic material that best suits the soil / microclimate combination or to analyze how they complement each other. This process started in 2010 with the first module and in 2011 we are faced with second.
Production Area: Valle de Cafayate - "Viña San Luis"
Grapes: Malbec 100%
Soil: in the pedemontana area, deep and stony, with natural organic matter and good water retention capacity for irrigation.
Altitude: 2000 mt s.l.m.
Training system: spaller, double spurred cordon.
Yield per hectare: 5 to 6 Tn / Ha
Plant density: 5000 strains / ha
Irrigation system: mixed, traditional and dripy.
Harvest: fully manual in 20 kg cassettes. The carefully selected grapes are harvested early in the morning to reach the still cold cellar. The transfer is done carefully by car and the distance from the cellar is about 2 km.
Vinification and ageing: tape transition with double selection of bunches and grapes. Traditional fermentation in stainless steel tanks and selection of individually micro-capped micropaparcels in containers of 225 lt. 12 months aging in first-aid French oak barrels. Duration of 10 years.
Colour: clear, deep red with violet reflections.
Bouquet: aromas of red fruits, plums, pepper and spices, with evolved notes of pyrazine, toasted and undergrowth, which exalt the characteristics of the terroir.
Taste: it is a wine with a good taste, texture, fleshy with mature, well-managed tannins. It is crisp and has good acidity. Elegant and long finish.
