Harvest: manual harvesting, first half of August.
Vinification and ageing: traditional white vinification on the skins maceration in concrete tanks at low temperature for 48 hours, fermented for 7 days in concrete tanks without selected yeasts, enzymes and fining use, at controlled temperature in second passage barriques. Malolactic fermentation and ageing for 8-9 months in French Allier oak barrels with a second passage with frequent batonnage made for suspending the lees. Then in bottle.
Colour: straw yellow color with golden reflections.
Bouquet: intense and elegant bouquet, with hints of citrus fruits, acacia flowers and medlar, slightly woody.
Taste: on the palate it’s fresh and very mineral.Taste balanced, long, round and persistent.
