Vinification and aging: manual selection of 24% of the grapes from the vines. The cold maceration pre-fermentations lasts three weeks and aims to extract tannins, essential prerogative for Sagrantino grapes. The fermentation takes place at a constant temperature through a modern temperature control, the hydrothermal system, according to tradition, the replacements are common in the early days. After racking the wine decanted in stainless steel tanks for a few days before being moved to the barrels and big barrels where malolactic fermentation and complete much of the cycle of aging on lees.Concluded the barrel aging the wines of the various containers are tasted and selected and finally, after bottling, the wine faces the long ageing in bottle.
