Pigato grapes, of Greek origin, may take its name from the vernacular "pigau", or "dotted", referring to the characteristic of the mature grapes that are dotted.

Vineyard age: approx 40 years
Vinification: in stainless steel vats and maceration at 4 ° C.
Fermentation: in steel tanks at 16 ° C, for 10 days.
Aging: 9 months on the lees in stainless steel vats without malolactic fermentation.
