Oi nì is not just a wine, but wants to be the sublimation of Fiano obtained through an ambitious and exciting production project. It has been conceived to be an atypical product but retains the highest concentration of naturalness possible: fermentation in oval and temperature controlled casks takes place with indigenous yeasts and with special care to ensure that everything remains intact throughout the entire journey . Oi nì is an act of courage that undergoes a little the whims of the years but always likes, convincing both critics of the industry and those who have a less professional approach to wine.

Harvest: grapes harvested in the first ten days of November.

Vinification and ageing: the soft pressing preceded the beginning of alcoholic fermentation with indigenous yeasts in 25 hl oval barrels at a controlled temperature of about 7 ° C, at the end of which the wine remained in contact with the fine lees for about 12 months. Subsequently the wine was bottled without any filtration. Ageing for 6 months in the bottle. The taste-olfactory sensations are amplified with oxygenation and with time. Wine with impressive structure. High its evolutionary potential.

Sensory

Colour: dense and dazzling saffron yellow.

Bouquet: an explosion of perfumes, all lying on a bottom of marine minerality from aniseed to withered yellow flowers, from salty butter to hay, from wild asparagus to truffles, on a delicate smoky background.

Taste: the sip is warm and enveloping, supported by a good freshness, balanced, elegant and slim. It closes with great persistence recalling the balsamic notes and the candied fruit. Long and good for ageing.
