Seven varieties: Pinot Meunier, Pinot Noir, Chardonnay, and rare varieties now and no longer used as Arbanne, Petit Meslier, Pinot Blanc and Fromenteau make the base-wine. Old vineyards and partly replanted. Bases of 2005-2006 without malolactic and realized with the Methode Perpetuelle (for convenience we can say Solera). Severe and varied. Brain, a game of balance between freshness and complexity.

Grapes and assembly: 10% Fromenteau (ancestor of Pinot Gris) - Arbanne 8% - 14% Pinot Noir - 18% Chardonnay - 17% Pinot Blanc - Pinot Meunier 18% -15% Petit Meslier
Vineyards: parcel planted by Thierry Laherte in 2003 in Chavot terroir.
Soil: calcareous clay with pebbles.
Cultivation method: traditional, environmentally sustainable and influenced by biodynamic methods.
Harvest: manual harvesting of fully ripe grapes.
Vinification and ageing: traditional pressing, natural fermentation in barrels of Burgundy (at least 10 years old). aging of wine with battonage for 6 months. No malolactic fermentation. Assembly of different vintages with a method similar to the "Solera": 60% of the wine-vintage base is added with 40% of reserve wines (kept from the first year of harvest). Light filtration before bottling in spring.
Colour: pale straw yellow.
Perlage: fine and persistent.
Bouquet: deep, complex, full of fragrant fruity aromas (pear, apple, tropical fruit), citrus fruit (peel and lemon), floral, mineral and earthy.
Taste: intense, rich and energetic palate, precise in taste-olfactory, with strong minerale.Finale cut along with good flavor and lively acidity.
