Grillo grape is one of the oldest in Sicily. It is perhaps the one that best recalls the perfumes and the richness of sensations. To taste it is like "taking a leap" in this region. It has an enviable freshness with moderate alcohol, floral tones of sure elegance, very fine vegetable flavors and a sweet and ripe citrus taste. It is a fairly savory wine, as part of the grapes come from vineyards adjacent to the sea coast ahead of the island of Mozia.
These characteristics make it an evocative wine that contains all the Sicilian sea, summer breezes and Sicilian citrus.
Production area: Western Sicily
Grapes: 100% Grillo
Training system: espalier, with Guyot pruning.
Altitude: mt. 150/400 s.l.m.
Plant density: from 4500 to 5500 plants per hectare.
Yield: 85/90 quintals per hectare.
Harvest: end of August
Vinification and ageing: 20% fermentation in barriques, 80% in steel. Ageing 20% in barriques, 80% in steel and 3 months in bottle.
Colour: bright greenish yellow that turns to straw.
Bouquet: intense and finely varietal bouquet with hints of sage and tomato leaf, citrus hints of lemon and grapefruit, freesia and white peach aromas. Honey and mineral cues reminiscent of gypsum and saltiness complete the fan.
Taste: excellent taste-olfactory correspondence, significant length on the palate, along which emerge freshness and flavor, with pleasing citrus flavors.
