Noble sweet wine, dessert wine, with 'pourriture noble' produced in the area east of Bordeaux, in a very interesting region for the production of botrytised wines, Bergerac, not well known, probably because of the reputation of Sauternes and Barsac, in particular for its wines produced in Monbazillac with Sémillon, Sauvignon Blanc and Muscadelle.Monbazillac wines are similar to Sauternes, although in the assembly have a greater amount of Muscadelle grapes. The grapes that have reached their optimum ripeness, are selected from the harvesters. This operation is renewed up to three times in each row of vines. The autumn mists, arising from the Dordogne River contribute to the development of Botritys Cinéréa that produces the noble rot. It promotes concentration of sugar after fermentation, gives this very famous wine its flavor liqueur with complex aromas (dried fruit, honey, citrus, flowers...).
In this case the Botrytis does very well his work and leads to a very elegant wine, fine and harmonious. For meditation.
