Grapes: 75% Chardonnay, 10% Pinot Blanc, Pinot Noir 15%.
Harvest: first and second week of August.
Average yield per hectare: 7,500 kilograms of grapes, equivalent to 4,730 liters of wine (wine yield: 63%).
Vinification: the base wines of Cuvée Prestige are obtained by applying a strict processing. The grapes are harvested by hand coded vineyard to vineyard, cooled in the cell and, before being pressed whole, are selected by expert hands and eyes. Alcoholic fermentation in stainless steel tanks controlled cellars where the wines remain until the following March. Seven more months of aging are needed wine for illimpidirsi, mature and bring out the most of the character of the vineyards of origin. Later, the wines are expertly blended with noble reserve wines of the best years (20-30%) in the "magic rite" of the creation of the cuvée. Only after aging on the lees average of 25 months this Franciacorta can express all its richness and identity. Disgorgement occurs in the absence of oxygen, using a unique system, designed and patented by Ca 'del Bosco. This prevents oxidative shock and further additions of sulfites, making our Franciacorta purest, most pleasant and most enduring. Finally, each bottle packaged is marked unambiguously, to ensure traceability.
Draw: April to June of the following harvest.
Yeast aging: average duration 25 months.
Dosage disgorging: sugar intake equal to 4 grams / liter.
Analytical data disgorging: Alcohol 12.5% Vol .; pH 3.15; Total acidity 5.55 grams / liter; Volatile acidity 0.35 grams / liter.
Sulfites: Sulfur Dioxide total of less than 53 milligrams / liter (maximum legal limit: 185 milligrams / liter).
