Born with the 2005 vintage, this cuvée is the latest creation by Bertrand Gautherot, an assemblage between Pinot Noir of the lieux-dit "Sorbée" and Chardonnay of the lieux-dit "Biaunes" (vineyard of the Blanc D'Argile). The traditional process of vinification of the Domaine is followed by a very long maturation period on the yeasts, of 9 years. Naturally not dosed.

Soil: clayey-calcareous and marly-calcareous
Vineyard: Lieux-Dit Bas de Biaunes- Lieux-Dit Sorbée
Harvest: manual for about 3 weeks
Vinification and ageing: racking, without pumping, in 400 liter drums. Fermentation with indigenous thousand yeasts.Elevage until the following spring when the malolactic fermentation takes place naturally. Aging for 9 years on bottled yeasts. Rémuage, and dégorgement (à la volée), are carried out exclusively by hand.
Colour: bright antique golden yellow
Perlage: fine and persistent
Bouquet: very complex, with slightly oxidative notes of honey and quince, sultanas and dried orange peel. There is no lack of fruity notes of undergrowth, fresh red fruit and citrus aromas (tangerine, red orange) accompanied by sweet spices, tobacco and sea breeze.
Taste:it shows great energy, sharp freshness, great impact, taut, dry, compact and precise. Such a complexity of sensations that make it intriguing, enveloping and engaging: a great Champagne!
