Bodega Toro Albalà produces about 500 thousand bottles a year and holds a huge number of vintages that cover 200 vintages of Spanish wine history, along with 8 thousand barrels with ageing wine.The weather here is a precious ally and the foresight in preserving different thousandths was and remains the distinguishing element of this winery. The grapes are harvested in August, when the ripening conditions are ideal, and then left to "dry" on the ground on traditional jute discs and turned by hand in such a way that the grapes preserve their integrity. The high temperatures of the day (up to 55 °) and the strong temperature variations during the night allow the grapes to wither while maintaining the acidity characteristics unaltered. The pressing, immediately after, is carried out gently in vertical presses, obtaining musts of great concentration: up to 500 g/l of sugar. The fermentation takes place in steel and is interrupted once the predetermined alcohol content is reached, mutating the musts with the addition of alcohol obtained by the distillation of its juice. After a refinement in steel, part of the product is bottled directly, giving rise to fresher and less dense wines, while a part begins its evolutionary path in wood, which turns out to be customized for each year. In fact, there is no standard ageing process, and wines are placed on the market only if they are considered "ready" to drink.
The best grapes of Pedro Ximénez, from the vineyards of Finca La Noria, in the appellation of Aguilar de la Frontera, have been selected by Toro Albalá to make this fantastic sweet wine. After harvesting, they were dried on mats in the sun until they were completely dried. Using a hydraulic press, the precious grape must was extracted, which remained, for at least a year, in a stainless steel tank. After this time, the wine has been bottled, without filtration, due to its high density. Although its sugar content and alcohol content are high, Don PX Cosecha 2016 surprises for its balance and lightness.
Colour: amber-yellow with orange reflections
Bouquet: intensely sweet with hints of dried fruit (raisins, figs, dried apricots and dates) and citrus notes (lemon juice, orange peel).
Taste: sweet and dense on the palate, it recalls the olfactory sensations of figs, raisins and dates. Long finish, persistent and fat, characterized by an intense honey sensation and a citrus aftertaste. Balanced and light.
