"A rosé with Pinot Noir infusion", so Bertrand Gautherot defines this cuvée; from Pinot Noir, prepared according to the method of bloodletting (saignée). Long carbonic maceration, in the absence of oxygen, indigenous yeasts for alcoholic fermentation and "prise de mousse". Prolonged vinification in oak barrels. Red fruits are integrated into the complexity of wine and a nice acidity accompanies and harmonizes the whole. The fact that this Pinot Noir comes from Sorbée region, it is no coincidence: the layered clay soils in thin large-area sheets, has long cultivated without the use of pesticides, allowed to store and consolidate the unique and typical plant micronutrients of the big red soil of Burgundy.

Soil: marl and limestone
Harvest: by hand for about 3 weeks
Vinification and ageing: racking, without pumping, in drums of 400 liters. Fermentation with indigenous yeasts vintages. Maturation until the following spring when the malolactic fermentation takes place naturally. Aged for at least 36 months on the lees in the bottle. Rémuage and disgorgement (à la volée), only are hand made.
Colour: bright cherry-red
Perlage: fine and persistent
Bouquet: intense and complex, with hints of red fruits, brioche bread and spices.
Taste: fresh and complex, well-structured, with mineral streaks, lingering, intense and fine.
Residual sugar: 0-3 g / l
