Chardonnay in purity, vines of 4/8 years, produced by a single vineyard, vinification with prolonged élevage in oak barrels, not dosage. Someone thinks of a "sparkling"wine of Chablis ... Once again it is the type of clay that characterizes this terroir. The minerality is strengthened by the particular microclimate of the vineyard, the Lieux-Dit of Bas des Biaunes, thanks to a fresh and varied ecosystem. The first vintage was 2004 and Bertrand Gautherot, who calls it "Un-indomitable Un Blanc de Blancs", intends to perpetuate its initial success.

Harvest: manual for about 3 weeks
Vinification and ageing: racking, without pumping, in 400 liter drums. Fermentation with indigenous thousand yeasts.Elevage until the following spring when the malolactic fermentation takes place naturally. Ageing for at least 36 months on bottled yeasts. Rémuage, and dégorgement (à la volée), are carried out exclusively by hand.
Production: very limited, about 1500 bottles.
Colour: bright straw yellow
Perlage: fine and persistent
Bouquet: fragrant in floral and citrus notes, with aromas of white flowers, green apple and citrus fruits blend with sweet, meringue and frangipane nuances. Elegant and exuberant.
Taste: on the palate it is sharp and direct, of great freshness and minerality, which binds to the floral and citrus notes. Great complexity, power and persistence.
Residual sugar: 0 - 3 g / l
