La Cuvée 36 of Casa Caterina is a classic method not dosed large, elegant and delicate, aged on the lees for 36 months. It has good intensity and aromatic richness, with notes of citrus fruits, spices and yellow fruit. On the palate it is soft and creamy, of great balance and long persistence.

Grapes: 100% Chardonnay
Soil: clayey, silty and sandy.
Training system: Guyot
Vinification and ageing: spontaneous fermentation in steel. Refermentation in the bottle according to the Classic Method using only must. Indigenous yeasts. Manual disgorgement. No dosage and no addition of sulfur. Bottling. Aging of 36 months on the lees in the bottle.
Colour: bright straw yellow
Perlage: fine and persistent.
Bouquet: intense, ample and delicate, fruity and floral with hints of citrus fruits, sweet spices, sage and yellow fruit.
Taste: complex and rich but at the same time taut and sharp, fresh, sapid and creamy, with long persistence.
