Together with Solessence Nature Brut is the calling card of Jean-Marc Sélèque: vinification of the 2/3 bases in steel and 1/3 in wood, structure and freshness are opposed, creating a pleasant harmony on the palate. Pass-par-tout champagne, from the aperitif to the whole meal. Solessence is born from the philosophy of the Maison: plowing of soils, rigorous pruning and control of yields, favoring the natural balance and biodiversity. Respect for life and wine with sustainable farming practices.
Production area: 7 villages between the Vallée de la Marne and the Coteaux south of Epernay: Pierry, Moussy, Epernay, Mardeuil, Dizy, Boursault and Vertus.
Grapes and assembly: blend of Solessence Brut Nature + 10% Meunier of maceration + 5% red wine from Pinot Noir: therefore 45% Chardonnay, 40% Meunier et 15% Pinot Noir. Harvest 2016.
Soil: mainly siliceous clays on chalky-chalky subsoil.
Vinification and ageing: vinification of each single parcel. Fermentation and malolactic fermentation of 70% in steel and 30% of wines in oak barrels without malolactic fermentation. 40% reserve wines, stored in large tanks and wooden barrels as a perpetual reserve since 2000. Minimal intervention for the wine. Natural cold stabilization, without clarification and filtration. Bottling in spring. Ageing on yeasts for at least 24 months or more.
Colour: bright antique rosé
Perlage: intense, fine and persistent.
Bouquet: a pure and complex bouquet of strawberries, a touch of blood orange, gentle notes of rhubarb, rye toast, chalky soil tones, a bit of clove-like spices and a topnote of rose petals.
Taste: on the palate the wine is pure, full-bodied and zesty, with excellent depth at the core, bright acids, fine mousse and impressive backend mineral drive on the long, poised and beautifully balanced finish.
