Soil: composed of silt, clay and marl, the presence of ilica and plaster in the surface. Underground limestone. Traditional culture.
Grapes: 60% Pinot Meunier, 30% Chardonnay, 10% Pinot Noir
Assembly: 40% of reserve wines
Vinification and ageing: grapes are picked up by hand when fully ripen, and traditionally pressed. Alcoholic fermentation in vats and oak barrels 228 l. according to grape varieties and plots .Malolactic fermentation partly made .Ageing during 6 months on the lees and light filtration before bottling during the springs time.
Colour: bright straw yellow.
Perlage: fine and persistent.
Bouquet: fruity with aromas of green apple and pear, fragrant and toasted.
Taste: fresh and sharp, delicate and light but with structure and complexity that make it rich and persistent.
Dosage: 4.5 g / l
