Solessence is the Maison's philosophy : ploughing of soils, strict pruning and control of yields. Favoring the natural balance and biodiversity. Singlevineyard winemaking. Respect for the Life and the Wine by sustainable practices.
Production area: 7 villages accross the Marne Valley and the Côte des Blancs : Pierry, Moussy, Epernay, Mardeuil, Dizy, Boursault and Vertus.
Grapes and blend: 50 % Chardonnay, 40 % Meunier and 10 % Pinot Noir, from harvest 2014 with 50 % of reserve wines from perpetual reserve.
Vinification and ageing: Individual vinification of each plots. 90 % of the wines with alcoholic fermentation in stainless steel and malo-lactic fermentation. 10 % of the wines with alcoholic fermentation in oak barrels without malo-lactic fermentation. Reserve wines storred in large tanks and woods casks as a perpetual reserve since 2000. Minimum intervention to the wine. Natural cold stabilization, no fining and light filtration. Bottling in Spring. Aging on the lees for at least 18 months or more.
Colour: crystalline straw yellow
Perlage: fine and persistent
Bouquet: floral and citrus notes that blend with elegant notes of yeast, biscuits and brioche.
Taste: fresh, sapid, balanced and harmonious, creamy and with mineral finish.
