Production area: Petite Montagne - Les Mesneux, Sacy, Villedommange, Premier Cru.
Grapes and blend: 50% Pinot Noir - 19% Chardonnay - 31% Meunier, base cuvée with wines from the latest harvest plus 45% of vins de réserve previous vintages.
Soil: clay-limestone and chalky
Average age of vines: 18 years
Vinification and ageing: 10% of the total is vinified in tonneaux. Malolactic fermentation, natural cold stabilization, light filtration, min. intervention on wines. Aging for 85% in thermo-regulated stainless steel vats and oak barrels, 15% on lees for 6 months and rest in the cellar for 22 months.
Colour: bright straw yellow
Perlage: fine and persistent
Bouquet: at first glance a very clear sensation of freshness and cleanliness, which makes the important fruity matrix crisp, enriched with citrus notes, aromatic herbs and minerality, all in the background, but very well integrated, harmonious. There is also a delicate sweet vein, which makes the olfactory expression more inviting.
Taste: freshness and cleanliness are reaffirmed, and citrus arises which continues until it is closed, always refreshing. It is a taut champagne, fresh, exceptionally clean, balanced, linear and complete, with a pleasantly citrusy finish.
