Production area: Petite Montagne - Les Mesneux, Sacy, Villedommange, Premier Cru.
Grapes and blend: 50% Pinot Noir - 19% Chardonnay - 31% Meunier, base cuvée with wines from the latest harvest plus 45% of vins de réserve previous vintages.
Soil: clay-limestone and chalky
Average age of vines: 18 years
Vinification and ageing: 15% of the total is vinified in tonneaux. Malolactic fermentation, natural cold stabilization, light filtration, min. intervention on wines. Aging for 85% in thermo-regulated stainless steel vats and oak barrels, 15% on lees for 6 months and rest in the cellar for 15 months.
Colour: bright straw yellow
Perlage: fine and persistent
Bouquet: nose tied to black varieties, but not dark or dark, of great freshness and crispness with a clear citrusy component and a touch of dried fruit, to finish off with a refreshing hint of aromatic herbs on a sub-theme of saline minerality.
Taste: brilliant minerality with a marked freshness, for a taut wine, clear in its extreme cleanliness, but also round due to the excellent and rich material. Harmonious and precise, not simply refreshing, but even engaging. Sweetly citrus and salty finish, tasty and once again, refreshing.
