The seventh Chef de Caves Perrier-Jouët, Hervé Deschamps, chose to create this exceptional cuvée using only Chardonnay grapes, in homage to the innovative spirit of the Maison and two centuries of mastery in the enhancement of this unique grape. Selecting and combining the Chardonnay from the best terroir of the region, Hervé Deschamps obtains a wine with a lively freshness, characterized by elegance and vitality. After three years of rest in the quiet of the Perrier-Jouët cellars, the wine is ready to express its energy. Up to 15% of reserve wines (wines of the previous two or three years).
Production area: Côte des Blancs (Cramant, Vertus, Bergeres-lesVertus), Montagne de Reims (Villers-Mamery, Vaudemanges and Trépail), Sézannais and Vitry.
Grapes and assemblage: 100% Chardonnay - 2013 base plus 15% of reserves from the 2011/2012 vintages.
Vinification and ageing: fermentation at controlled temperature in stainless steel containers. Malolactic fermentation, 30 months after baking powder.
Colour: bright golden yellow with soft green reflections
Perlage: fine and persistent.
Bouquet: strong aromas of wild white flowers, such as elderberry, acacia and honeysuckle and slight citrus notes.
Taste: the wine is fresh, clean and vigorous, with a very intense mineral note in the finish. It elegantly declines a full-bodied material, thanks to its non-invasive hazelnut component, which forms the basis of the dominant and transversal note of "floreality". Pure pleasantness.
