Made only with Pinot Noir, this Champagne evokes the power and fullness of the fruity aromas that Grand-Cru plots of Verzenay and Verzy produce with a wonderful elegance.

Soil: silty and siliceous-gravely soil on sometimes surfacing chalk.
Assembly: 70% of the 2013 harvest and 30% of the reserve wines since 1968 (solera).

Vinification and ageing: the grapes are pressed by a Bucher 4000 kg, flat press at very low pressure. Alcoholic fermentation of 12 days at 18 ° C in glazed tanks of 10, 20, 40, 60hl. Malolactic fermentation carried out when necessary. The wines spend 6 months on the lees. A slight filtration follows. Assembly with 30% of the reserve wine kept in solera from 1968 to the last harvest. Aging in bottles for 5 years.Remuage with giropalette.
Dosage ingredients: brown sugar and reserve wine
Additional ageing after disgorgement: at least 6 months.
Colour: it has a fluid, light and bright yellow with onion peel reflections. The visual sensation indicates a fresh wine with aromatic sensations.
Perlage: it is crossed by fine and lively bubbles that create a delicate chain.
Bouquet: concentrated and fruity nose of black and white currant, licorice; toasted bread, butter, toasted almonds; vegetable, black pepper, nutmeg. Olfactory persistence that continues on mineral and chalky notes typical of the territory.
Taste: rich, dense and consistent, with creamy and soft perlage. Fresh and fruity with a mineral-chalky flavor that closes softly with elegance, length, vinosity and a good consistency.
