This Blanc de Blancs is made with the best parcels of Chardonnay (located on the south slopes of Epernay and the Côte des Blancs).This is a perfect representation of the purety and energy coming from this area and the complexity of old vins of Chardonnay.
Production area: Coteaux Sud d'Epernay-Côte des Blancs-Chavot
Grapes and assemblage: 100% Chardonnay -50% of reserve wines from previous vintages aged in barrels on lees.
Soil: limestone soils and sometime with a presence of fine silts and chalk in surface. Chalky subsoils.
Cultural practices: vines growing with the respect of nature. Influenced by ecoligical methods.
Perlage: fine and persistent.
Bouquet: intense and complex, mineral, floral and delicately fruity.
Taste: sharp, sapid and, although not dosed, perfectly balanced and harmonious in the relationship between softness and freshness. Precise soil expression, plays between chalky and mineral tones and citrus notes, lime and ginger. In the deep emerge delicate and pleasant notes of white pulp fruit.
