This famous distillery is born in the eastern part of Guatemala, Zacapa, a town (capital of the homonymous department) founded at the time of Spanish colonization. Founded in 1940 by 3 local families, Girón, Estrada and Gordillo, the distillery is located on the banks of the Motagua River, on the fertile volcanic terrain typical of Guatemala. The southern coast of the country is the most suitable for the cultivation of sugar cane, enriched by the tropical sun shining all year long. The production was entrusted to the beginning of a rum expert in Spain, Dr. Burgaleta. Zacapa's territory, featuring majestic landscapes, high mountains and active volcanoes, has a very fertile soil, dedicated to the cultivation of sugarcane. In plantations, to ensure the excellence of the final product, the cutting of the canes is made through a special type of machete that allows truncation of the stem to the base, avoiding sugary dispersions and contaminations. Zacapa Rhums are made from pure sugar cane juice, called Miel Virgen (virgin honey) from Guatemaltechs, which is then fermented for five days with the aid of a yeast extracted from the pineapple plant; this guarantees a unique and consistent flavor and aroma over time. Rhum Zacapa ages on the plateaus of the city of Quetzaltenango at an altitude of 2300 meters above sea level, where the "ageing on the hills" in the so-called "Casa sopra le Nuvole". This site, chosen by the master blender of the cellar, Lorena Vasquez, is characterized by a fresh climate that favors a slow ageing in white oak casks, previously used for Bourbon whiskey and Sherry, and handmade by local craftsmen. Finally, Rhums Zacapa are created with the solera method: assembling of barrels different for vintages and characteristics, makes it possible to obtain excellent quality rum and unmistakable taste. They are recognizable for the rich, deep, harmonious and unparalleled flavor, bottled in packs wrapped up by Petate, a palm leaf twist once reserved for the sovereigns and a symbol of union between heaven and earth. This vegetal wrap-around fabric perfectly reflects the splendid nectarof Zacapa: born from volcanic and aged terrain between the clouds, descended from the mountains of Guatemala to give unique emotions.
