This is the place; the most authoritative but also austere soil of Côte des Blancs, where chalk and other minerals strongly connote the grapes: Le Mesnil-sur-Oger. Classified Grand Cru Blanc de Blancs, is renowned for the excellence and soil vocation for growing Chardonnay grapes.The Maison is driven with initiative by Christophe Constant who, over time, has been able to interpret with great technical skills but also with dynamic commercial vitality, its Blanc de Blancs. East-facing vines, over 30 years, are grown on slopes from the chalky soil, surrounded by forests and subject to the influence of the many surrounding lakes moisturizer. After rigorous manual harvest, carried out in the maturity of maximum possible time of the grapes, in order to obtain the best balance between fruitiness and finesse, the grapes undergo a delicate pressing in the traditional press and, after static decanting, the different musts are subjected to fermentation in stainless steel tanks or oak barrels. The second fermentation in the bottle followed by aging on the lees for a period of 3 to 5 years depending on the cuvée. Disgorging "à la volée" and the use of minimum dosages give these wines nerve and vivacity characteristic of the terroir that is combined with finesse and unique elegance of chardonnay, giving rise to champagne to wait, vertical and slow to reveal itself .
