Jean-Baptiste Geoffroy is one of the vigneron more prepared and determined in Champagne. In 2008 he transferred the winery from Cumières to Aÿ, making a major investment in old-fashioned Coquart presses, to ensure a soft pressing. Following the road of a more and more rigorous vinification plot, of a use of more and more centered woods, the oneness of grapes and terroir expression, in order to obtain the essential result of the minimum dosage, this vigneron distinguished himself for experimentation, getting closer and closer to nature, even without choosing the organic way. In this cellar are exclusively used indigenous yeast, in a renewal process that led, in addition to decreasing the dosage, to a range of cuvées that perfectly reflects the differences between the 45 parcels of property, each vinified separately, for a total of 14 hectares, made of Pinot Noir and Pinot Meunier 40% each and the remaining 20% of Chardonnay. Most of the vineyards are located in Cumières, where the harvest starts and finishes early than the rest of Champagne; the others are mainly in Damery and Fleury-la-Riviere. No wine undergoes malolactic fermentation, which gives backbone and aging potential of all these Champagne.
