Bertrand Gautherot is a small manufacturer RM, owner of the Domaine (and not Maison, with obvious influence of nearby Burgundy) consists of 5 hectares of vineyards, of average age 20 years, a preponderance of Pinot Noir, which are rooted in a the land of the upper Jurassic. The organic cultivation of vineyards certified as a Demeter Biodynamic in 1998 ,is very accurate and it applies only to natural nutritional compounds, processed directly by the vigneron and do not use anything chemical and synthetic; it was made the replanting of fruit trees and traditional tractors have been replaced by "motochenille", very light feet. The harvest is manual and developed in about three weeks. From this point everything is simple: no pumping, the juice is racked into barrels of 400 liters, parts or barrels. Each winery operation is made by people who work the vineyards of the area, fully aware, involved and proud to themselves. The alcoholic fermentation is done with indigenous vintage yeasts and malolactic naturally triggers spring. The sulfur dioxide is used only after the harvest and forgotten in the laboratory until the end of the production process. Prise de mousse, resting on yeasts, rémuage, and disgorgement (à la volée), are made exclusively by hand.
