Château Liot belongs to the family David since several generations and it is Jerry David today who takes charge of the production of these 25 hectares of vineyards. The property situated on the tray (plateau) of High Barsac (Haut Barsac) takes advantage at most of the microclimate of Sauternes. The peculiarity of the ground of High Barsac is this clay and red soil which rests (bases) on a bed of fragmented limestone. The grape harvests are the object of a particular attention by the owner. A rigorous selection of the noble grains (beads) as well as a wine making attached to the traditional methods, give to Château Liot wines brightness, intensity which seduces by the elegance and the wealth of its aromas. Jerry David also has very near in Pujols sur Ciron the Château Saint Jean des Graves, AOC Graves, a vineyard of 20 ha where are produced a very fruity dry white wine and an excellent red wine breeded in oak barrels. The rational wine growing is the applying of the rational agriculture concept to the wine growing. This applying concern the Château Liot and Château Saint Jean des Graves. To take off the best part of botrytis is not evident. Its action on the grapes is not uniform. It's why it is necessary to pick the grapes one by one. The grape harvests can be staggered up to two months, the quantity is reduced, it benefits to the quality, it follows that production is lower than 25 hl/ha.
