Recoltant-Manipulant a Jouy-lés-Reims

In Jouy-les-Reims, in the heart of Little Mountain of Reims, Pierre and Philippe Aubry, descendants of a long line of wine growers since 1970 have taken a real openness deciding to revive the ancient vineyards abandoned, previously grown in Champagne. Equipped with sound knowledge and experience gained from his father, Pierre and Philippe have thus won their bet: combine the classic original. It is a selection of rare cuvee. The collection reflects even more the spirit of the Maison, a true philosophy summed up in a few principles: rigor, respect for tradition, originality and creativity. Agronomist rigor that favors grape quality, directing attention to the performance of each vineyard; rigor of the computer that uses the best "tools of the trade" available; respect for tradition with a traditional pressoir, the selection of the "heart of the cuvée" (the extraction of the cuvee is made discarding the first and the last juices to get the "heart of the cuvée") and aging in barrels; originality of an individual path that goes against all the standardization of the wine of Champagne; creativity shown through archaeological research of old vines, in order to revive the wines from the late eighteenth century to those who love bubbles vibrating. The application area of this idea of wine of Champagne is a farm of 16 hectares with more than 60 parcels. This plot of land, different exposure and different grape varieties, allows the two brothers to perpetuate the style Aubry, enriching the collection via the limited series of exceptional champagne.
