Grapes: Garganega 40%, 30% Fernanda (clone Custoza), Trebbiano 15%, 15% Trebbianello (clone Tocai)
Vinification: the different ripening stages of individual vines, early September for Trebbianello, mid-September for Fernanda and early October for Garganega and Trebbiano, suggest the separate vinification of grapes. The grapes are picked by hand are placed in crates and then de-stemmed and pressed. Only Fernanda, because of its semi-aromatic character, is macerated for a few hours before pressing. Musts, clarified, ferment for 10-15 days at a temperature of about 18 ° C. Apart from exceptional vintages, the malolactic fermentation is avoided. The wines are left in contact with the lees until January / February, when the final cuvée takes shape.
