PRODUCT INFORMATION

The vines come from Burgundy. The strong fluctuation in nocturnal temperatures common in San Quirino helps enhance the natural aromatic notes of the variety and makes the wine truly unique. Once complete, the wine continues to evolve for around 12 months in small oak barrels.

Harvest: manual

Vinification: The maceration takes place in containers of vitrified cement for about 6 days during which are carried out daily delestage, to allow more complete extraction of the polyphenols. The temperature of fermentation is set approximately 26 to 30 ° C.

Aging: Aging for about 12 months in French oak barrels of 225 liters, first-pass

Bottling: At about 15 months after harvest

Sensory

Colour: Ruby red, not always very intense.

Bouquet: Delicate, fruity and complex aromas that evolve after the aging in wood with hints of tar and vanilla.

Taste: a wine with good structure and velvety, soft, not aggressive on the palate
